A little taste of fall

I’m going to briefly stray away from my usual travel posts to share a recipe that I LOVE! Since I’ll be living in Spain this fall, I don’t know how feasible it will be to make my favorite fall cookies so I thought I would share the recipe with you now. Here’s a recipe for pumpkin chocolate chip cookies!


Pumpkin Chocolate Chip Cookies

(Pre-heat oven to 350 degrees before you begin)


  • 1 cup butter or margarine
  • 3/4 cup packed brown sugar
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 cup quick cooking oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinammon
  • 1 cup canned pumpkin
  • 1 & 1/2 cup semi-sweet chocolate chips


  • In a mixing bowl, cream butter and sugars


  • Beat in egg and vanilla


  • Combine flour, oats, baking soda, salt and cinnamon in a separate bowl


  • Stir this dry mixture into the wet, alternating with the pumpkin
  • Add the chocolate chips


  • Drop dough by tablespoonfuls onto greased cookie sheet


  • Bake for 12-13 minutes, or until lightly browned
